RICHARD PURKISS

Working in restaurants and hotels gave Richard a passion for the Hospitality Industry. After graduating from the University of Gloucestershire in Cheltenham, England, Richard moved to the USA. After completing a Management Internship at St Andrews Country Club in Boca Raton, he was afforded the oppportunity to become an F&B Manager for the third largest hotelier in the US. Based out of a hotel on Knoxville, Tennessee, Richard was able to travel with the company and open up new hotels and restaurants. From there several stints as an F&B Director led Richard into the standalone restaurant world. Landing at Larkspur Restaurant in Vail, Colorado, Richard was given an opportunity to assist with the openings of two new restaurant concepts, as a part of the parent company Savory Group. The latter, Restaurant Avondale, was from the ground up, literally.

A brand new building, the opportunity to help design the functionality of the working areas were key in making Restaurant Avondale a success. As General Manager of the project, and with a large staff, the concept opened to great reviews and garnered many awards. The project was part of the larger Conde Nast no. 1 ranked resort - The Westin Riverfront Resort and Spa, and the Savory Group had the contract for all of the F&B services.

Richard's next stop was to return to the UK, at the world renowned Pennyhill Park & The Spa.  With four restaurants, one with two Michelin stars, it was a great change to bring back the European style of service and hospitality.

After Pennyhill, The Brew House Hotel in Royal Tunbridge Wells awaited.  As General Manager of the boutique hotel, the hotel went from strength to strength, with the restaurant quadrupling cover counts! A Michelin award followed not long after.  One of the single biggest influences on the success of the restaurant was the beverage program.  It was the place everyone wanted to go and be seen.

After The Brew House Hotel, Richard moved back to the US and started Richard Purkiss Consulting LLC.
